How to make elderflower champagne


It is elderflower season and nothing can be more refreshing than a nice cold glass of low alcohol champagne made just with few ingredients. Elderflower wilts quickly so make it as soon as possible. 


INGREDIENTS 

• 5 L water bottle 
• 5 elderflower flowers fully opened with lots of pollen and make sure you don't wash them 
• 1 lemon peeled than sliced 
• 10 tablespoons of sugar
• very small pinch of yeast 

METHOD 

1. Take out about a cup of water out of the water bottle. 
2. Add the sugar and yeast to the bottle and shake until the sugar is dissolved. 
3. Add the sliced lemon than the elderflower flowers, put the lid on and shake the bottle once then place it into a bright warm place with the lid off , just cover briefly .

4. Let it sit for 3 days .
5. Use a fine strainer to drain the liquid into bottles and let them opened at room temperature to sit for another 2 days . 
6. Close the bottles and store them in the fridge . 
If you like it to be sweeter you can add more sugar or any other sweetener you prefer.
