Potatoes and onion omelette

INGREDIENTS:

  • 1 big potato peeled and sliced
  • 1 onion thinly sliced 
  • 2 Tbs oil
  • 4 eggs
  • 3 Tbs milk 
METHOD:

  1. Add the potatoes into a pan with water and boil for 15 minutes
  2. In a large frying pan saute the onion in the oil on a medium heat in till caramelized 
  3. When the potatoes are boiled, drain and add to the frying pan and mix with the onion 
  4. Beat up the eggs with salt and the milk, add on top of the mix of onion and potatoes cover with foil and cook on a low fire for 5 minutes 
  5. After 5 minutes uncover the omelette and flip on the other side, cook for another 2 min
