Potatoes and onion omelette
INGREDIENTS:
- 1 big potato peeled and sliced
- 1 onion thinly sliced
- 2 Tbs oil
- 4 eggs
- 3 Tbs milk
- Add the potatoes into a pan with water and boil for 15 minutes
- In a large frying pan saute the onion in the oil on a medium heat in till caramelized
- When the potatoes are boiled, drain and add to the frying pan and mix with the onion
- Beat up the eggs with salt and the milk, add on top of the mix of onion and potatoes cover with foil and cook on a low fire for 5 minutes
- After 5 minutes uncover the omelette and flip on the other side, cook for another 2 min
