Chicken meatballs

INGREDIENTS:

  • 2 chicken thighs mince
  • 1 onion chopped
  • 1/2 red pepper chopped
  • 1 carrot grated 
  • 50 g bread crumbs 
  • 1/2 teaspoon of salt
  • flour for coating 
  • oil for frying 
  • 1 knob of butter 
METHOD:

  1. Into a small frying pan on a medium fire melt the butter and saute the onion, red pepper and carrot for 5 minutes 
  2. Place the mince chicken, bread crumbs, salt and the saute onion, red pepper, carrot into a bawl and knead till every thing is combined 
  3. Form 1 inch balls and coat with flour 
       4. In a large frying pan heat the oil on a medium fire and fry the meatballs on each side for 3 minutes 
   When they are ready place on a plate lined with some kitchen towel to remove any oil .
