Pollock fish with couscous salad


INGREDIENTS:
  • Pollock fish fillets 
  • flour for coating 
  • 1 cup couscous 
  • 1 1/2 cup water 
  • 150 g frozen peas
  • 1 onion chopped
  • 1 red pepper chopped
  • 5 tbs olive oil
  • 2 tbs lemon juice
  • 1 tbs apple vinegar 
  • 1 tbs salt
COUSCOUS SALAD :
  1. Add the onion, red peppers, olive oil, lemon juice, vinegar and salt into a bowl mix together and set aside 
  2. Into a medium pan add the water and peas, bring to boil and cook for 5 min. 
  3. After add the couscous cover and turn the fire off, leave it for 5 min. Use a fork to fluff up the couscous and peas then add it to the vegetable mixture. Stir them together 
POLLOCK FISH FILLETS :
  1. Coat the fish fillets in flour 
  2. Into a large non-stick frying pan add some oil and fry the fish for 5 min on each side or until is lightly brown 
All is left know is to arrange them on a plate and enjoy. 😋
