Pollock fish with couscous salad
INGREDIENTS:
- Pollock fish fillets
- flour for coating
- 1 cup couscous
- 1 1/2 cup water
- 150 g frozen peas
- 1 onion chopped
- 1 red pepper chopped
- 5 tbs olive oil
- 2 tbs lemon juice
- 1 tbs apple vinegar
- 1 tbs salt
- Add the onion, red peppers, olive oil, lemon juice, vinegar and salt into a bowl mix together and set aside
- Into a medium pan add the water and peas, bring to boil and cook for 5 min.
- After add the couscous cover and turn the fire off, leave it for 5 min. Use a fork to fluff up the couscous and peas then add it to the vegetable mixture. Stir them together
- Coat the fish fillets in flour
- Into a large non-stick frying pan add some oil and fry the fish for 5 min on each side or until is lightly brown
