Green beans soup with vegetables and tomatoes

INGREDIENTS:
  • 500 g green beans cut into pieces 
  • 1 carrot chopped
  • 1 celery stalk chopped
  • 1 onion chopped
  • 1/2 red pepper chopped
  • 2 big ripe tomatoes chopped into small pieces 
  • 1 tbs oil
  • 1 teaspoon paprika
  • 2 tbs salt 
  • 2 liters of water 
METHOD:
  1. Into a big pan add the water and bring it to boil. When the water is boiling add the green beans, carrot, celery stalk and 1 teaspoon salt. Bring it back to boil cover and lower the heat .
  2. Meanwhile heat the oil into a frying pan and add the onion, peppers and 1 teaspoon salt, saute for 5 minutes on a medium heat. After 5 min add the 1 teaspoon of paprika, mix and then add the chopped tomatoes, saute in till the tomatoes start to break or become mushy . When are ready set aside in till the beans are boiled .
  3. When the green beans are boiled (this may take 30 min) add the saute onion, peppers and tomatoes on top and mix . Boil together for another 10 min .
