Mussels my way


 How to prep your mussels 
  1. Wash and remove the beards under cold water if needed, i was lucky enough to find very clean ones .
  2. Put the mussels into a big bowl and add 2 tbs of flour cover with water and mix, leave them to stay for 30 minutes just in case they have some sand inside. 
  3. After 30 minutes rinse them and leave to drain .
INGREDIENTS 
  • 1 kg mussels 
  • 6 cloves of garlic crashed 
  • 10 cherry tomatoes cut in quarters 
  • 2 tbs olive oil 
  • chopped parsley 
METHOD
  1. Into a large high side frying pan heat the oil and add the garlic and cherry tomatoes, cook for 2 min on a high heat .
  2. When the tomatoes start to break a bit add you mussels give them a stir, cover the pan tightly and steam for 4-5 minutes on a high heat until the shells have opened .
  3. Discard any unopened mussels give them a stir and add the parsley on top . 
You can have them as they are or you can take the shells of, boil some spaghetti and mix them with the sauce and mussels like i did 😉😋.
