Mussels my way
How to prep your mussels
- Wash and remove the beards under cold water if needed, i was lucky enough to find very clean ones .
- Put the mussels into a big bowl and add 2 tbs of flour cover with water and mix, leave them to stay for 30 minutes just in case they have some sand inside.
- After 30 minutes rinse them and leave to drain .
- 1 kg mussels
- 6 cloves of garlic crashed
- 10 cherry tomatoes cut in quarters
- 2 tbs olive oil
- chopped parsley
- Into a large high side frying pan heat the oil and add the garlic and cherry tomatoes, cook for 2 min on a high heat .
- When the tomatoes start to break a bit add you mussels give them a stir, cover the pan tightly and steam for 4-5 minutes on a high heat until the shells have opened .
- Discard any unopened mussels give them a stir and add the parsley on top .
