Teriyaki chicken with rice and mushrooms
INGREDIENTS:
- 2 large chicken thighs deboned with skin on
- 2 tbs teriyaki sauce
- 10 mushrooms cut into quarters
- 1 cup rice
- 2 cups water
- 2 tbs oil
- 2 teaspoon salt
- 2 spring onions chopped
- Into a small bowl put the chicken with the teriyaki sauce and massage together, leave to marinate for 30 min.
- Into a medium pan on high heat add 1 teaspoon of oil and the rice, fry it for 2 minutes and add the water, bring it to boil then cover and lower the heat. Cook it for about 15 min or until in no more water.
- Heat 1 teaspoon of oil into a wok and add the mushrooms with 1 teaspoon of salt, stir fry for 3-4 minutes. When they are done set aside .
- In the same wok on a high heat fry your chicken for 3 minutes on each side starting with skin side down . When the chicken is ready cut it into bite size pieces.
