Teriyaki chicken with rice and mushrooms

INGREDIENTS:
  • 2 large chicken thighs deboned with skin on 
  • 2 tbs teriyaki sauce 
  • 10 mushrooms cut into quarters 
  • 1 cup rice 
  • 2 cups water
  • 2 tbs oil
  • 2 teaspoon salt 
  • 2 spring onions chopped 
METHOD:
  1. Into a small bowl put the chicken with the teriyaki sauce and massage together, leave to marinate for 30 min.
  2. Into a medium pan on high heat add 1 teaspoon of oil and the rice, fry it for 2 minutes and add the water, bring it to boil then cover and lower the heat. Cook it for about 15 min or until in no more water.
  3. Heat 1 teaspoon of oil into a wok and add the mushrooms with 1 teaspoon of salt, stir fry for 3-4 minutes. When they are done set aside .
  4. In the same wok on a high heat fry your chicken for 3 minutes on each side starting with skin side down . When the chicken is ready cut it into bite size pieces.
All is left to do know is to put everything together, start with the rice after the mushrooms and chicken and sprinkle the spring onions on top . I forgot to say that this recipe is for 2 😁.
