Mushroom soup
INGREDIENTS
- 500 g mushrooms sliced ( i used oyster mushrooms )
- 1 onion chopped
- 1/2 teaspoon paprika
- 1 1/2 tbs flour
- 4 tbs sour cream
- 1 garlic clove crushed
- 750 ml vegetable stock
- 1 1/2 tbs oil
- Put the vegetable stock into a pan with the mushrooms and bring it to boil over a medium heat , simmer for 15 min .
- Meanwhile heat the oil into another pan over a medium heat , add the onion and saute until softened .
- After the onion softened add the paprika mix then add the flour and mix again in till every thing is incorporated then add little by little stock from the other pan were you boil the mushrooms and using a whisk mix in till you have a loose sauce .
- Add the sauce and the sour cream to the pan with the mushrooms, mix and bring it back to boil , cook for another 3 min on a medium heat.
- Turn off the heat and add the garlic cover and leave it for 2 min before serving . At this point you can check if it needs more salt, i didn`t add any because my stock was salty enough .
