Stuffed peppers my mum recipe
INGREDIENTS
- 8 small to medium peppers
- 200 g mince beef
- 1 cup of rice
- 1 chopped onion
- 1 tbs oil
- 1 teaspoon paprika
- 1 can chopped tomatoes
- 2 teaspoon salt
- 1 teaspoon black pepper
- 1 tbs of flour
- water just to cover
- Cut the top of your peppers and scoop out the seeds .
- Saute the onion and the rest of the peppers tops on a medium high heat for 5 min , then add 1 teaspoon paprika, 1 teaspoon salt, 1 teaspoon black pepper and 1 cup of rice, mix and turn the fire off . When the mixture cooled a bit add it on top of the mince meat in a bowl and mix together .
- Scoop the mixture into the peppers but leave 1 cm space on top because the rice will swallow and place them into a deep saucepan .
- Add the chopped tomatoes on top and water just to cover ,season with the last spoon of salt, bring it to boil then cover and lower the heat . Cook for 45 min to 1 hour( you don`t have to mix them just let them boil low and slow ) .
- Just before they are done in the last 5 min, mix 1 tbs of flour with 1/5 cup of water and add it on top to thicken the sauce , cover and don`t mix .
