Courgette / Zucchini patties
INGREDIENTS
- 2 medium courgettes/zucchini
- 2 large eggs
- 2 cloves of garlic
- about 1 teaspoon of parsley or any herb you like
- 3 tablespoons of flour
- 1 and 1/2 teaspoons salt
- Wash and peel your courgettes/zucchini then grate on a medium size grater in a bowl .
- Add the salt, mix and let it sit for 15 min so that the water that is in them comes out.
- After 15 min squeeze as much liquid as you can out .
- Throw the liquid away and place the squeezed courgette/zucchini back in the bowl .Add the 2 eggs , crushed garlic , chopped parsley and mix together .
- Add the flour , one spoon at the time (not to have any lumps) and mix.
- Heat some oil into a non-stick frying pan and with a table spoon add one by one .
- Fry the patties for 2-3 min on each side in till golden brown .
- Remove them on a kitchen paper lined plate to remove any excess oil . You can eat them hot or cold depends on what you like 😊 .
