What i eat in a day

Hi guys long time no see 😀 hope you all had a lovely Easter because ours was a bit of a struggle , just before the school holiday my son caught a horrible viral stomach virus and it passed to my husband and after to me and i better not get into to many details on a food blog post maybe i will talk about it on a different one . Let`s get back to what i eat in a day 😉

BREAKFAST
This is what i like to call back to basic 😃 breakfast was mashed avocado with a bit of salt and lemon juice on top of  some homemade bread with some scrambled feta cheese on top and sliced radishes .

LUNCH
For lunch i made my self a tortilla pizza 😉 i took one tortilla wrap spread some pasata on it then i topped it up with ham , mushrooms , cherry tomatoes , red peppers and cheddar cheese , baked it for about 5 min in a preheated oven at 200℃ and that`s it 😋 .

DINNER
I know this doesn`t look like much but is one of my sons favourite , he still is a bit fussy when it comes to food after that stomach virus that`s way i`m making all his favourites for dinner and we eat as well . It is chicken with spaghetti and it all cooks in one pot . Into a high side cooking pan i add some olive oil, 5 cloves of garlic mince and chicken , fry it for a bit on each side then i add water to cover .  Boil it in till the chicken it`s done and add enough spaghetti to cook and absorb the liquid in the pan . You can add any herbs you like i added some green oregano is what we prefer . Hope you enjoy it 😊 and see you next time 😉 😘 💋 💖
