Easy and quick kimchi recipe

The kimchi recipe I am sharing with you today is my family's favourite plus is very easy to make . Kimchi can be made out from lots of vegetables but we prefer cabbage. It is very good for you as it is full of probiotics and vitamins A , B and C .

INGREDIENTS 

• 2 Napa cabbages  
• 1 carrot 
• chives or sprig onions 
• garlic
• ginger
• 1 onion 
• 1/2 apple
• 1 tablespoons fish sauce 
• 1/2 cup Korean chilli flakes 
• 1/2 cup Korean chilli paste  
• 1/2 cup salt and some water
 
METHOD 

1. Cut the cabbage in bite size pieces and put it into a bowl, add the salt and water just to cover and mix . Leave it for about 1 hour in the salted water .

2. Meanwhile prepare the paste, into a food processor add the garlic, ginger, onion , apple and fish sauce, and process until smooth. 
3. After 1 hour rince the cabbage in clean water and return to the bowl. 
4. Cut the chives and carrot in smaller pieces and add to the bowl with the cabbage. 
5. Add Korean chilli flakes and Korean chilli paste then the sauce from the food processor.

6. Mix everything together very good and transfer into your desired dish. I like to leave mine few days to ferment before I put it in the fridge, but you can eat it straight away 😊 .
